Preparation

Begin to remove the skin of the garlic and place it with a little extra virgin olive oil in a pan. Turn on the heat and let it brown over low heat for a few minutes. Then add the tuna previously drained from its oil.

Leave it to flavor for a few minutes, then add a pinch of fine salt.

Meanwhile, cook the pasta in a pan filled with salted water. Take a bowl and beat the egg yolks together with the pepper and Parmesan.

Carefully wash and dry the parsley; with the help of a knife or a mandolin, finely chop it.

As soon as the pasta is almost cooked, drain it with a slotted spoon and pour it directly into the pot together with the tuna.

Leave the pasta to flavor by adding a ladle of cooking water; mix the ingredients and continue to mix them over low heat.

Quickly mix the pasta: if the sauce is too dry, add another ladle of cooking water. Add the chopped parsley and serve the dish immediately.
