For cakes and desserts: strawberries and alchermes

There wet cakes is a fundamental preparation to ensure the perfect humidity of cakes such as sponge cake, panettone and leavened products, but also tiramisu and similar desserts. It can be prepared with simple water and sugar or by adding a little rum for desserts, but it is also possible to prepare a different and truly delicious cake syrup: the wet for cakes with strawberries and alchermes, perfect for moistening sponge cake made with custard and fresh fruit. It is prepared in a few minutes and a few steps and the result will be amazing! This recipe will be enough to wet three sponge cake discs with a diameter of 22 cm. Furthermore, at the end you will find suggestions for preparing it even in a non-alcoholic version for children!

Ingredients for 250 ml of wet

  • Ripe strawberries: 500 g
  • Still water: 200ml
  • Sugar: 60g
  • Alkermes: 45 ml
  • Preparation: 8 minutes
  • Cooking: 7 minutes
  • Total: 15 minutes

Preparation

Wash the ripe strawberries perfectly with plenty of running water. Place them on a cutting board and remove the leaves with a knife, then cut them into cubes, or in any case into rather small pieces. They don’t need to be equal to each other, because the final compound will be blended.

Pour the water and sugar into a thick-bottomed saucepan, then add the cut strawberries. We advise you to use a non-stick saucepan, so that the syrup does not stick.

Place the saucepan over medium heat and cook, stirring constantly with a wooden spoon, for about 5-7 minutes or until the strawberries are overcooked and soft.

At the end of cooking, turn off the flame and add the alchermes.

Let it cool completely, then immerse a mixer in the mixture and blend everything until you get a smooth cream. If you don’t use it immediately, pour the mixture into a glass and store in the refrigerator when it has completely cooled.

Advice and tips

To prepare a syrup with strawberries in a non-alcoholic version suitable for children, you can replace the alchermes with del lemon juice, in the same dose (45 ml). Buy organic, unprocessed lemons.

The syrup for cakes with strawberries and alchermes is characterized by a particularly full-bodied consistency due to the presence of strawberries. For this reason it is indicated to wet very soft cakes and we advise you to use it with one day in advance than when you will have to fill your cake.

You can wet your sponge cake or other dessert using a kitchen brush or directly pouring the syrup by spoonfuls over the entire surface of the leavened product.

Conservation of cake syrup

The syrup for cakes can be kept covered, in the refrigerator, for 24 hours maximum. It cannot be frozen.
