And who hasn’t wanted to dip the wooden spoon into the steaming pan of beans and sausage eaten by the two protagonists? It is said that Terence Hill was forced to fast for more than 24 hours before filming that famous scene. Here is the recipe for Bud Spencer beans, creamy and tasty, fragrant and irresistible! They are simply prepared with frozen or canned beans to be cooked with a delicious sauté based on spring onion and sausage, spicy and spicy thanks to the presence of fresh chilli pepper. To make Bud Spencer beans like in the famous film, start by placing a pan of water on the heat and adding a spoonful of salt. Immediately add the frozen beans and bring to the boil.

As soon as the water starts to boil, add the bicarbonate of soda and as the beans cook, remove the foam that forms on the surface with the help of a slotted spoon. Cook over medium heat for about 30 minutes. Before turning off the flame, take a bean and feel it with your fingers: it must be soft but still whole and must not fall apart. At that point the beans will be ready.

In the meantime, chop the sausage finely with a knife and also take care of the spring onion: peel it, divide it in half and remove the stem. Finely chop the purple (or white) part.

Pour the extra virgin olive oil into an earthenware pan, add the finely chopped spring onion and fry it for two minutes over a low heat. Add the sausage and brown it for five minutes, stirring often with a wooden spoon to prevent it from sticking to the bottom of the pan. Also add the chilli flakes or fresh, finely chopped.

Add the tomato pulp, season with salt and mix, then leave to cook for 10 minutes.

Drain the cooked beans using a slotted spoon. Pour them into the tomato sauce and taste: if needed, add another half teaspoon of fine salt. Mix well to combine all the ingredients.

Let everything flavor for another 10 minutes on low heat. Once cooked, turn off the heat and serve immediately, piping hot and steaming.

Tips and tricks

To prepare Bud Spencer beans you can also use canned beans, in the same dose. In that case you can drain them from the preserving liquid and rinse them well under running water, then add them directly to the pan with the onion and sausage.

You can add a sprig of dried rosemary to flavor your Bud Spencer beans, along with a clove of poached garlic.

Serve your beans with a slice of toasted bread in a panto ensure a perfect shoe!

You can add even more flavor by adding cubes of sausage to the sausage bacon.
