Apple pancakes, the recipe for a delicious snack

The apple fritters they are a delicious and very simple recipe to prepare for a snack or for a different breakfast than usual: it’s simply a matter of peeled applescored and cut into thin slices, immersed in a delicate batter based on milk, eggs, flour and baking powder, then fried and passed in a mix of granulated sugar and cinnamon to be flavoured. The preparation is simple and quick and we assure you that one leads to another! Apple fritters probably originate in South Tyrol, an area truly rich in apple orchards and where many apple-based recipes are widespread. Ingredients for 24 pancakes

  • Apples: 3
  • Lemon: 1
  • 00 flour: 150 g
  • Whole milk: 200 ml
  • Eggs: 2
  • Yeast for cakes: 8 g
  • Fine salt: half a teaspoon
  • Seed oil for frying: 500 ml
  • Granulated sugar: 30 g
  • Cinnamon: to taste
  • Preparation: 15 minutes
  • Cooking: 30 minutes
  • Total: 45 minutes

Preparation

To prepare the apple fritters, start by making the batter. Beat the whole eggs in a bowl with the help of a fork.

Also add the milk, fine salt and sifted flour.

Sift the baking powder into the bowl and mix with a hand whisk until you obtain a smooth batter without lumps. Set it aside, covered with cling film.

Squeeze the lemon juice, which will help prevent the apple slices from blackening. Now start peeling the apples with a potato peeler, removing all the peel from the whole apple.

Remove the peel completely and then, using a special corer, remove the core of the apple.

Cut the apples into slices of about 5 mm, to obtain a donut shape. Dip the apple slices in the lemon juice, which will keep them clear.

Place a pan with the peanut oil on the heat and turn on the heat. The oil must reach a temperature between 170°C and 175°C, you can monitor this with a kitchen thermometer. If you don’t have one, you can try dipping a long toothpick into the oil and seeing if it makes bubbles when you dip it. At that point you can dip the apple slices into the reserved batter, one at a time.

Completely immerse the apple slice and then transfer it to the boiling oil. Immerse 1 piece at a time, so as not to lower the temperature of the oil too much. You can turn the apple fritters during cooking using a slotted spoon to ensure even cooking.

As the pancakes are ready, place them on a baking tray with a sheet of absorbent paper. Pour the granulated sugar and ground cinnamon into a bowl, then mix them.

Dip each apple fritter in sugar and cinnamon, first on one side and then on the other. Place each seasoned slice on a serving plate. Your apple fritters are ready to be enjoyed, still hot.

Tips and tricks

To prepare apple fritters you can use your favorite apples any variety.

Always pay attention to oil temperaturewhich must not be too cold or too hot: if too cold the pancakes will be soggy and full of oil, while if too hot they will burn in a few seconds.

You can replace the granulated sugar with powdered sugaror use raw cane sugar.

You can enrich the apple fritters with some Maple syrupor with honey, and garnish them with raisins and dried fruit such as walnuts or almonds. If you want, you can also serve them with an accompaniment of custard for an amazing dessert!

If you want, you can avoid dipping the apple fritters in sugar and instead season them with a pinch of salt: in this way you can serve them as also delicious accompaniment to pork-based second coursesbecause the taste of apples goes perfectly with pork.

storage

We advise you to consume the apple fritters by few minutes, in order to best enjoy its crunchiness. However, you can also serve them cold, keeping them covered with a sheet of absorbent paper.

We do not recommend freezing.
