Toffee, sweet homemade candies

If as a child you just couldn’t resist and consumed the entire pack of Alpine love in just one day, then this is definitely the recipe for you! We reveal how to prepare at home, in just 20 minutesthe toffee candies. The toffee is a candy prepared with caramelized sugar, butter and cream. The mix of ingredients is cooked until it reaches a state where the sugar will be completely melted and burnished, but will not harden due to the presence of cream and butter fats. The mixture is then left to cool and cut into many small pieces. With a pinch of salt, your toffees will be really delicious! The preparation is super simple and the only real challenge will be don’t get burned by the searing caramel. You’ll never buy toffee again, because making them at home is really child’s play.

Ingredients for 40 toffee candies

  • Cream: 150ml
  • Butter: 50g
  • Sugar: 200g
  • Salt: 1 pinch
  • Preparation: 10 minutes

Pour the cream, butter, sugar and a pinch of salt into a thick-bottomed saucepan and place on the stove over medium heat. Melt everything by stirring with a whisk until boiling.

Keep stirring without ever raising the flame. In about 10 minutes the caramel sauce will have thickened and turned a coppery, slightly browned colour. Put out the fire.

Pour the mixture into a 10x16cm pan lined with parchment paper. Be careful not to burn yourself! Alternatively, you can use a silicone mold, without adding parchment paper.

Let the mixture cool at room temperature for about 1 hour. As soon as it has cooled, remove it from the mold and place it on a cutting board. With a rather large knife, cut rectangles of about 2×2 cm. Your toffees are ready to be enjoyed!

Advice and tips

While the caramel sauce is cooking, continue to keep the flame medium, without never turn it up in an attempt to speed up the process. Raising the flame would mean giving the caramel a burnt aftertaste. Be patient and keep stirring over medium heat until ready.

You can increase the dose of cream to 200ml if you like softer sweets. In this case, wait approx 2 hours before cutting the caramel cold.

You can add grated orange zest if you like the citrus flavor.

When they have passed about 30 minutes after resting, you can sprinkle the surface of the toffee with flaked almonds or hazelnuts, or with dark chocolate that you can cut into flakes. Let it cool again and then cut it all up.

If you like the candy effect you can wrap each toffee in a square of parchment paper and wrap them giving the shape of real candies. They will keep even longer!

storage

Toffees can be stored in a glass or tin container up to 1 monthin a dry and cool place. We do not recommend storing candies in the refrigerator. The pantry will do just fine!

The toffees can also be frozen for up to 3 months, inside the special sachets, after being cut.
