Strawberry cheesecake, the fresh no-bake recipe

This cheesecake can be prepared in just 30 minutes and needs to rest in the fridge for approximately 3 hours before being served, but the wait will be completely repaid by the exceptional taste! In our version we add the chopped strawberries in the filling, but you can also blend them to have a colorful and tasty cheesecake, ideal for serving at birthday parties or dinners with friends. Ingredients for 8 people

  • Dry biscuits: 200 g
  • Melted butter: 80 g
  • Mascarpone: 250 g
  • Sweetened whipped cream: 200 ml
  • Strawberries: 350 g
  • Gelatin: 10 g
  • Milk: 2 tablespoons
  • Water: 200ml
  • Cornflour: 2 tablespoons
  • Sugar: 80 g
  • Preparation: 30 minutes

Preparation

Wash the strawberries thoroughly under running water. Remove the stalk and cut them into pieces.

Fill a small bowl with water and soak the gelatin sheets until they become soft.

Pour the mascarpone into a second bowl and then add the whipped cream. Mix from bottom to top so as not to deflate the cream. Separately, pour the milk into a saucepan and heat it over a low heat.

Squeeze the previously soaked gelatin sheets, add them to the hot milk and wait for them to melt, stirring them with a wooden spoon.

Add the milk and gelatine to the bowl with the mascarpone and mix. Also add 100 grams of the cut strawberries and mix everything, then place in the refrigerator.

While the filling rests in the refrigerator, prepare the topping to pour on the cheesecake: pour water and sugar into a saucepan and turn on a low heat. When the sugar has dissolved, add the cornstarch and mix well, so that it takes on a thick, gelatinous consistency.

Once the mixture is very thick, add the remaining 250 grams of chopped strawberries and cook until they have softened. Turn off the heat and keep aside. Then put the biscuits in a mixer.

Blend until you obtain a grainy flour. Transfer the flour into a bowl and add the melted butter, then mix with a spatula to mix well.

Line the base of a springform pan with a sheet of baking paper, fitting the sheet between the base and the sides of the pan. Cover the base with the biscuit and butter mixture and compact everything well using a spoon or the base of a glass.

Now add spoonfuls of the mascarpone, cream, strawberry and gelatine filling, distributing it over the entire surface. Cover with the strawberry topping and leave to rest in the refrigerator for at least 3 hours before serving your cheesecake.

Tips and tricks

As the base of your no-bake strawberry cheesecake you can use any type of biscuits you prefer. We used gods biscuits with chocolate chips to give an even more particular flavour, but you can also use dry biscuits or the digestive variety.

The ingredients for the filling must be very cold. So take care to keep it mascarpone and cream in the fridgewhipping the cream following the procedure described in the recipe for perfect whipped cream.

If you don’t want to use gelatine, also known as isinglass and which contains animal derivatives such as cartilage and bovine bones, you can replace it with a natural thickener,agar agarwhich you can find in specialized pastry shops.

It is essential that the no-bake strawberry cheesecake rests in the refrigerator before serving, otherwise you risk it melting when cutting the slices.

You can replace the mascarpone with 350 grams of plain Greek yogurt with 5% fat. Furthermore, you can enrich the filling even more by adding pieces of milk or dark chocolate.

No-bake strawberry cheesecake can be stored in the refrigerator for 3 days maximum inside a cake bell.

You can also freeze it and let it thaw in the refrigerator before consuming it.
