Strawberry cheesecake, simple and fresh

Strawberry cheesecake is a simple dessert, ideal in spring when the strawberries reach their maximum degree of sweetness. It is a very quick recipe, with few ingredients and without isinglass or gelatine. Cream, Philadelphia and strawberries will be enough to obtain a perfect filling, creamy and soft at the right point. The base is made with delicious digestive-type chocolate biscuits, which go perfectly with everything else. In short, a real riot of flavors. Being a no-bake cheesecake, it is also perfect to prepare during the hottest days, when turning on the oven would be hell.

Ingredients for 8 people

  • strawberries: 300 g
  • chocolate biscuits: 200 g
  • butter: 80 g
  • powdered sugar: 70 g
  • Philadelphia: 200 g
  • fresh cream: 250 g
  • Preparation: 30 minutes
  • Cooking: 6 hours
  • Total: 6 hours, 30 minutes
  • Calories: 321 Kcal / 100 g

Preparation

First, break up the biscuits with your hands and then blend them with a mixer. You will need to get a dusty compound. Alternatively, put them in a freezing bag and pound them with a rolling pin.

Melt the butter in a bain-marie.

Add the butter to the biscuits, mix with a spatula to create a moist mixture.

Pour it into a 16-18 cm diameter cake pan lined with parchment paper.

Transfer to the refrigerator for 30 minutes.
