Duvet cake, an easy and delicious recipe for a cake that resembles a quilt

Its appearance is reminiscent of the texture of a quilt: the Duvet Cake is a soft and greedy cake, easy to prepare and with a flavor reminiscent of cheesecake. In fact, the soft cocoa base is combined with delicious strips of cream cheese to give life to this dessert that is great for any occasion. The light cheese texture recalls the diamond effect of the classic quilted duvets: as well as good, it is also beautiful to look at! Here is the easy recipe to prepare the delicious Duvet Cake.

Ingredients for a 40×40 cm pan

  • Eggs: 6 medium
  • Sugar: 300 gr
  • Peanut oil: 120 g
  • Milk: 130 g
  • Cocoa powder: 30 g
  • Baking yeast: 2 tsp
  • Flour 00 (for cakes 180W): 340 g
  • FOR THE CHEESE CREAM:
  • Spreadable cheese: 250 g
  • Sugar: 40 g
  • Egg: 1
  • Corn starch (cornstarch) or potato starch: 15 g
  • Preparation: 30 minutes
  • Cooking: 30 minutes
  • Total: 1 hour

Basic preparation

To start, separate the yolks from the whites of the 6 eggs needed for the base of the Duvet Cake, pouring them into two different bowls.
Beat the egg whites until stiff with an electric mixer or a planetary mixer.

In the other bowl, beat the egg yolks together with the sugar, until a frothy and homogeneous mixture is obtained. Always use a medium / high speed mixer.

Once the frothy mixture is obtained, add the milk to the egg yolks with sugar and continue to beat at medium speed to incorporate it.

Then pour in the previously sifted flour, cocoa and two teaspoons of baking powder. Mix everything with the whisk at low speed.

When all the flours have blended with the mixture, pour in the seed oil while continuing to mix with a kitchen spatula.

When the oil is also well incorporated, add the whipped egg whites several times. Mix them into the mixture gently and making circular movements from the bottom up, so as not to take them apart and deflate the dough. Help yourself with a whisk or a kitchen spatula. Keep aside.

Preparation of cream cheese and cooking

Now let’s prepare the cream cheese useful for forming the decorative grid on the surface. In a bowl, pour the egg, sugar, cream cheese and corn starch. Mix well with a hand whisk (or a low speed mixer) until you get a smooth and lump-free cream.

Pour the cream cheese obtained into a pastry bag with an opening of about 1 cm in diameter or a spout of the same size.

Take the cocoa mixture from the Piumino cake and pour it entirely into a 40×40 cm baking pan lined with parchment paper.

Now proceed with the creation of the grid: with the sac à poche, form some crossed transversal lines, forming a grid over the entire surface of the cake. Proceed in this way until the cream cheese is used up.

Bake the cake in a preheated static oven at 170 ° C for about 30/35 minutes. Once cooked, take it out of the oven, let it cool and finally serve it!

Tips and tricks

  • It is possible to flavor the Piumino cake mixture with vanilla or with the grated rind of a lemon.
  • When placing the strips of cream cheese on the surface, act gently and without haste. Once the cake is cooked, they will tend to drop slightly with respect to the rest of the dough, forming the quilted effect on the surface.
  • The Duvet Cake can be eaten either hot (or lukewarm) or cold, according to your preferences!

storage

Store the Duvet Cake under a glass bell or in an airtight container, preferably in the refrigerator. Consume it within 2/3 days at the most. We do not recommend freezing.
