Preparation

Pour the fresh cream into a large bowl and whip it until stiff with an electric mixer. The cream must be very cold and so must the whips; for this reason we advise you to put them both for a few hours in the fridge before use.

In another separate bowl, always work the mascarpone with an electric whisk, until it reaches a homogeneous and creamy consistency.

Add the condensed milk to the mascarpone and mix the ingredients well, working them with a whisk. You will get a smooth and full-bodied cream.

Add the previously whipped fresh cream to the cream obtained and incorporate it gently with a spatula, making movements from the bottom upwards, so that the mixture does not disassemble and remains well swollen. Use your Camy Cream to embellish your sweet recipes.

Tips and tricks

  • Camy Cream should be used very cold. For this reason, once composed, put it in the refrigerator for at least ten minutes before using it.
  • For a perfect whipping of fresh cream, we advise you to put all the tools in the refrigerator well in advance, then the cream, the whips of the electric mixer and, if you have space, also the bowl in which you are going to whip it. Everything must be cold for an optimal result.
  • When, as a last step, you are going to incorporate the whipped cream into the mascarpone and condensed milk mixture, be careful to make delicate movements from the bottom up with a spatula. In fact, whipped cream contains air and mixing it too vigorously would cause it to fall apart.
  • The Camy Cream lends itself perfectly to being used to decorate sweets and cakes, such as the beautiful and scenographic Cream Tart in the shape of a letter or number. Alternatively, you could serve it in single-serving bowls garnished with berries and a sprinkling of icing sugar: it becomes a delicious and original spoon dessert.
  • This is the basic version of the mascarpone cream. You could add unsweetened cocoa powder, melted dark chocolate or a cup of espresso coffee, to give it an extra boost. Explore the various flavors by testing the addition of the ingredients you like best.
  • If you don’t have condensed milk with you or you don’t like the taste of it, you could try replacing it with powdered sugar. However, the consistency will be different and less dense.

Use the prepared Camy Cream immediately. Alternatively, store it in the refrigerator in an airtight container or in a bowl covered with cling film, for a maximum of two days.
