Pistachio cream, a delicacy to spread

But we don’t need excuses to eat them, just have a bag at home, and every hour is good, to start tasting two and not be able to stop. Pistachios have also conquered space in the kitchen, not only in sweet recipes, but also for the preparation of savory dishes. On meat and fish as panura, or as a touch of crunchiness in grains, pesto is also used to season first courses. Let’s see how to prepare this base cream, which will be useful for preparing various desserts. In fact, we can stuff simple cream puffs, to mimic those delicious pastries that we see in all pastry shops, or prepare reinterpretations of the great classics, such as tiramisu or profiteroles. The procedure is quick and easy, within everyone’s reach. It starts with pistachios, which are chopped together with sugar. The paste obtained is combined with the hot milk in which we will melt some white chocolate. Alternatively you can prepare a base of the classic custard, with egg yolks, flour and milk, and add the pistachio paste.

  • Sugar: 100 g
  • White chocolate: 100 g
  • Milk: 120 ml
  • Butter: 40 g
  • Preparation: 15 minutes
  • Cooking: 8 minutes
  • Total: 23 minutes
  • Calories: 306 kcal / 100 g

Preparation

We shell the pistachios, and put the seeds in the mixer.

We blend together with the sugar.

Add a spoonful of milk and mix.

In a saucepan, heat the milk with the butter and white chocolate.

Then add the pistachio paste.

Let it mix until the cream thickens, if necessary add a teaspoon of flour. In my case, from the first step I have some coarse pieces of pistachio left, so after cooking I went to blend again to obtain a smooth and homogeneous cream.

Pistachio besides being very versatile and appreciated for its taste, has several nutritional properties. It is rich in vitamins and minerals, although it is not recommended for those with diabetes and hypertension. Furthermore, due to its high calorie content, we must limit ourselves however difficult it is to consume, especially if we are following a diet.
