Chickpea burger, an alternative sandwich

We are used to thinking of the hamburger as the classic meatball in a soft sandwich with sauces, tomato and salad. The chickpea burger is one vegetarian variant to this classic fast food restaurant. This does not mean that it will be less tasty and less junk food! Preparing the meatball for the chickpea burger is really simple, you just need a mixer and a little imagination. I thought of flavoring it with pickled gherkins and mustard, but I also recommend you try it with dried tomatoes. You will find that it is possible to obtain a tasty sandwich even without the meat because it is sauces and condiments that make the difference. It is a perfect recipe if you have vegetarian guests during an outdoor barbecue: you will prove attentive to their needs by making an effort to bring to the table something different from the usual grilled vegetables. They are excellent if you have children who do not like to eat vegetables and legumes. Seen in this form they will make less fuss.   • Chickpeas: 1 can
  • Pickled gherkins: 2
  • Grain mustard: 1 tbsp
  • Egg: 1

Making the chickpea burger is pretty simple. All you need is a food processor to blend the ingredients.

Drain the chickpeas from the preserving liquid and rinse them thoroughly under water. To make it less effort, help yourself with a colander or a cola pasta, then transfer them to the robot.

Add the egg, mustard, gherkins, grated cheese and a little pepper to taste. For the salt I advise you to wait because a lot of flavor is given by the ingredients.

Blend until you get a smooth cream.

Add the parsley and give a quick stir. Remove the blade and transfer the mixture to a bowl. Start adding breadcrumbs until you get a firm but not too dry consistency.

A couple of tablespoons should be enough. In any case, I advise you to wait a few moments before adding the next spoon so as to give the mixture time to absorb it.

Get a pastry cutter the size of your sandwich. If you don’t have it, make the meatball with your hands, it doesn’t have to be perfect. Also cut out 4 pieces of parchment paper.

Put a spoonful of mixture in the center of the pastry ring.

Press well with the back of a spoon. You will need to get a thickness of about one centimeter.

Continue until the mixture is used up, then pass them in the breadcrumbs.

Fry them in half a centimeter of seed oil.

Then serve them inside burger buns, top with sauces, tomato, salad, and wedges of cheese.
