The perfect beer chicken: the simple and tasty recipe

The Beer chicken it is one of those second courses that is truly perfect for a tasty dinner or a Sunday second course that is different from the usual roast. In addition to being a very easy preparation, beer chicken is also cheap, fragrant, delicious and juicy. Chicken meat retains all the aftertaste of the beer clear used both for the initial marinade and for cooking in the oven. The aromatic herbs, the garlic and the browning with oil and butter in a pan contribute to the uniqueness and goodness of this dish, whose preparation time is reduced to 10 minutes, followed by 1 hour of marinating in the refrigerator. You can accompany the beer chicken with sautéed mushrooms or breaded and crunchy fried artichokes, but also with a classic side dish of roasted potatoes.

  • Chicken: 1 kg in pieces
  • Light beer: 400ml
  • Garlic: ½ clove
  • Rosemary: 2 sprigs

Preparation

Marinate the chicken pieces (thighs, breasts, wings) in the lager in a large bowl.

Add the peeled and halved garlic, a few grains of black pepper, thyme and rosemary. Mix and leave to marinate for 1 hour in the refrigerator, covered with transparent film.

After the hour, drain them well from the marinade, keeping the liquid aside. Flour them carefully.

In a large saucepan, heat the 30 ml of oil and the 30 g of butter. As soon as the butter has completely melted, add the chicken pieces and brown them.

Turn the chicken often using tongs. The pieces should be evenly browned. Add a pinch of salt.

Transfer the chicken pieces to a baking dish and pour in the reserved beer marinade. Turn on the oven in static mode at 200° and, when it is hot, put them in the oven and cook them for 45-50 minutes in the lower part of the oven.

Once cooked, remove them from the oven and serve immediately.

Advice and tips

The recommended beer for this preparation is one lager or pilsner, two light and not very bitter varieties. However, if you are a particularly beer lover and also greatly appreciate the bitter aftertaste, you can use different beers such as red, amber or stout, to obtain a more intense and particular taste.

We recommend you to buy the chicken pieces already portioned from your trusted butcher.

You can add your favorite spices and herbs. Particularly pleasant is the taste of sage, which goes well with lager beer. You can also add bay leaf and marjoram.

Adjust the cooking in the oven according to the size of the pieces: you can cook for 40 minutes pieces of smaller dimensions, while we advise you to extend the cooking up to 50 minutes if the pieces were to be particularly large.

One last suggestion? In the baking dish with the chicken and the beer, before putting them in the oven, add a half white onion cut into rings. It will become very soft and make your chicken even more delicious.

You can also use just chicken drumsticks or whole thighs instead of using all the pieces. In this case, regulate yourself with the cooking: usually the spindles cook in more time.

storage

Beer chicken can be refrigerated, covered, for 1 day maximum. Before serving, you can heat it in a pan with a ladle of water, to make it soft again. Freezing is not recommended.
