Shish kebab, the tasteful recipe of the Arab tradition

The Shish kebab is a typical dish of Turkish cuisine, a preparation of the Arab tradition based on marinated meat skewers, flavored with spices, and then cooked on a spit or on the grill, making it an excellent excuse to spend summer evenings in company. For its preparation, chicken, beef or lamb meat is usually used accompanied by sauces and, for those with a sweet tooth, it is possible to enrich the dish with French fries. Ingredients for 2 people

  • Chicken breast: 500 g
  • White yogurt: 250 g
  • Honey: 1 tsp
  • Cumin: 1 tbsp
  • Lemon: juice of ½ lemon
  • Salt up: to taste
  • Black pepper: ½ tsp
  • Extra virgin olive oil: 1 tbsp
  • Pepper: 1
  • Red tomato: 1

Preparation

Take a baking dish and pour the yogurt and honey into it.

Squeeze the juice of half a lemon and add it to the bowl.

Also add the cumin seeds and salt until you like.

At this point, add the black pepper and a drizzle of extra virgin olive oil together with the other ingredients.

Mix all the ingredients well until you get a smooth cream.

Take the chicken breast and cut it into cubes of about 3 cm each; place it in the bowl of the newly created sauce.

Mix the chicken well, cover the bowl with cling film and leave it to marinate in the refrigerator for a minimum of 2 hours to a maximum of 12 hours.

Retrieve the pepper, remove the internal seeds, wash it under running water and finally cut it into cubes.

Repeat the same operation with the tomato: wash it, remove the seeds and cut it into cubes of the same size as the chicken and pepper.

Now remove the chicken from the marinade.

Dry all the pieces with absorbent kitchen paper and start composing the skewers.

On each wooden toothpick, alternate the chicken with the pieces of vegetables. Repeat until the ingredients are complete.

Heat a plate on the stove, place the skewers and let them cook for about 5 minutes per side before serving.

Tips and tricks

  • We suggest some sauces that can be adapted well to kebabs: baba ganoush sauce which is based on aubergine cream flavored with mint and tahini; a sauce of Greek yogurt, oil, mint, lime juice, salt and pepper; or with the sauce tzatziki also based on yogurt, but with the addition of cucumbers, oil, garlic and salt.
  • You can enrich your Shish kebab with other vegetables such as zucchini, onions or diced potatoes, perhaps adding a few bay leaves.
  • You can use various types of meat: try a fillet or round of beef, lamb, turkey or pork.
  • We advise you to use steel or bamboo skewers: it will be easier for you to extract the meat.

Shish kebab can be stored in the refrigerator, in an airtight container, for a maximum of 3 daysat a temperature not exceeding 5 °.

History

The word Shish kebab can be translated as ‘meat cubes on a skewer cooked on the grill’: shish refers to the cooking method while kebab translates as ‘cooked or fried meat’.

The kebab is a dish of Persian origins: already in the 4th century BC i Persian knights they used to roast meat using their swords. Now it is often served by street vendors with diced meat or minced meat and then skewered: traditionally it is cooked on special grids in which the skewers are placed vertically; once ready they are picked up individually with the help of one Pita which is a typical middle eastern bread.
