Chicken rolls with smoked cheese and ham

The pan-fried chicken rolls they are that second meal-saving dish: very easy to prepare, cooks in a short time and ensures a truly delicious and tasty dinner or lunch! These are simple slices of chicken breast flavored and stuffed with scamorza cheese and cooked ham, wrapped and cooked in a pan with butter and sage. They will be crunchy and savory on the outside, while they will remain very creamy and soft inside! Furthermore, the chicken rolls with scamorza cheese and ham can be kept and eaten the next day, when they have absorbed all the flavors and are even tastier. Everyone likes them, young and old, and they are infallible even for those who are unfamiliar with cooking.

Ingredients for 6 people

  • Chicken: 12 thin slices
  • Cooked ham: 4 large slices
  • Scamorza cheese: 50 g
  • Butter: 40g
  • Fine salt: to taste

Preparation

Cut the scamorza into slices and set aside.

Arrange the chicken slices on the cutting board. If they aren’t thin enough, use a meat tenderizer to thin them. Sprinkle with salt and black pepper powder.

Divide the cooked ham slices into 12 strips. Lay each strip on the individual slices of chicken breast. Instead, place the scamorza only on the underside.

Roll up the rolls and secure them with a toothpick. Transfer them to a plate.

In a large frying pan, melt the butter and add the sage and thyme. As soon as the butter has completely melted, add the rolls and brown over low heat for 5 minutes on each side, turning them with the help of kitchen tongs.

As soon as the rolls are browned on all sides, pour half a cup of warm water. Cover with a lid, set the stove to very low heat and cook for 20 minutes. This will create a tasty sauce.

Once ready, serve the hot rolls.

Advice and tips

You can replace scamorza with other cheeses, such as smoked provolamozzarella (better if buffalo and the day before) or thin slices.

You can replace the cooked ham with raw ham if you prefer. In that case we advise you to use mozzarella or fiordilatte, to contrast the flavor of the raw ham.

You can also insert breadcrumbs with chopped aromatic herbs, such as sage, rosemary and thyme, inside the rolls.

You can give an extra touch of tastiness by wrapping the rolled chicken with thin slices of tight bacon. The rolls will thus be even more crunchy and tasty!

You can prepare a version of chicken rolls with vegetables: we recommend, for example, filling the rolls with baked peppers and peeled and provolone.

Pan-fried chicken wraps can be stored in the refrigerator, inside an airtight container, for 1 day.

If you have used only fresh ingredients you can too freeze them for up to 1 month. Then let them defrost out of the refrigerator and heat them in the oven or in a pan. The texture will be slightly different.
