Put the flour and lemon thyme on a plate.

Start squeezing two lemons whose juice you will use later during cooking. You have to be very careful not to let the pulp and seeds end up in the juice.

Beat the meat using a meat tenderizer or with your hands to make it softer. The cooking will be very quick and the slices shouldn’t be too thick. Season the chicken with fine salt on both sides.

Flour the chicken breast on both sides. Once floured, shake off the excess flour.

Put a drizzle of EVO oil in the pan and start heating it over low heat.

Brown on both sides over medium-high heat for 2 minutes per side, add the lemon juice and cook for another minute. Cook the chicken breasts 3 or 4 at a time according to their size and the size of your pan. Leave on the fire until the cream of the density you think is right has been created.

Once cooked, move them onto a plate and add another drizzle of EVO oil, cook the remaining chicken breasts following the same procedure. If the chicken breasts are very thin, one minute of cooking per side will suffice.

Advice and tips

We can add some black pepper and chopped parsley. If instead we want to make the presentation of the dish more attractive, we can cut some strips of lemon zest used for the juice, cut them into strips and place them on the chicken.
