Sweet black pudding, the cream of Carnival

The sweet black pudding is a recipe of the Italian tradition revisited. In fact, in the original recipe, the main ingredient was pig’s blood and being illegal since 1992, it has been permanently replaced by chocolate. The new reinterpretation of black pudding is a very sweet one chocolate cream, true to the original only in dark brown color and density. Ideal to accompany especially the typical Carnival sweets such as chiacchiere or castagnole. Of course the black pudding is also a fantastic and very quick dessert spoon ideal for any season.

Ingredients for 6

  • Whole milk: 600 g
  • Granulated sugar: 150 g
  • Bitter cocoa powder: 60 g
  • Dark chocolate: 150 g
  • Corn starch (cornstarch): 40 g
  • Butter: 30 g
  • Cinnamon powder: 2 g
  • Preparation: 10 minutes
  • Cooking: 10 minutes
  • Total: 20 minutes
  • Calories: 302 Kcal / portion

Preparation

In a large bowl, combine the sugar with the cinnamon.

Also add the starch and cocoa passed through a sieve.

Mix the flour compounds

Then add the cold milk slowly, mixing with a hand whisk to avoid the formation of lumps.

You will need to obtain a homogeneous mixture free of lumps

Transfer the mixture to a saucepan and place it on low heat where you need to thicken it, stirring often: it will take about 10 minutes. Always keeping mixed with the whisk.

Meanwhile, coarsely chop the dark chocolate

When the cream is thickened add it to the pot, stirring with whips until completely dissolved.

Finally add the butter, mix it too with the cream until it is nice and shiny and turn off the heat.

Pour the black pudding into bowls or into a large pan, cover with cling film and let it cool to room temperature. Then transfer to the fridge for at least 2 hours before consuming.

Advice and curiosities

  • In the absence of corn starch we can also use rice starch.
  • We can also prepare a sweet alcoholic black pudding adding a liqueur to taste.
  • If we want to use it as a dessert we can add walnuts and raisinsthe result will not disappoint.
  • This cream can also be used as a base for an excellent chocolate tiramisu.
  • According the amount of chocolate and cocoa which is added obviously varies the color of the final result. On the basis of the cooking time we can instead modify its density.
  • In Umbria this dessert is called Meaccio.

storage

The sweet black pudding can be safely stored for a week in the refrigerator, covered with a film.
