Christmas cookies with royal icing

THE Christmas cookies they are delicious sweets made from shortcrust pastry, decorated with royal icing made with egg white and icing sugar. They are beautiful and colorful, perfect for decorate the Christmas table (and to be eaten at the end of the dinner) but they are also ideal to be given as gifts to friends and relatives in personalized bags. The preparation of the biscuits is very simple and you can choose the molds you prefer to make them. Making Christmas cookies can also be a way to entertain the childrenbecause this recipe is really within everyone’s reach!

Ingredients for 800 g of biscuits

  • Soft butter at room temperature: 250 g
  • Flour 00: 400 g
  • Granulated sugar: 150 g
  • Yolks: 4
  • Albumen: 20 g
  • Grated lemon zest: 1
  • Icing sugar: 100 g
  • Food colourings: red and green
  • Preparation: 2 hours, 20 minutes
  • Cooking: 15 minutes
  • Total: 2 hours, 35 minutes
  • Calories: 467 calories/100 g

Preparing biscuits

Start by pouring the flour into a bowl, adding the butter cut into very soft pieces and the grated lemon zest.

Rub the butter with the flour with the palms of your hands, in order to sand the mixture.

Finally, add the sugar and the egg yolks, mixing initially in the bowl.

Continue to knead on a work surface, until you get a smooth and compact dough.

Wrap the dough in cling film and let it rest in the refrigerator for 30 minutes.

After resting, dust a work surface with flour and roll out the shortcrust pastry to a thickness of 4 mm with a rolling pin.

With the appropriate cutters, cut the biscuits and then place them on a baking sheet lined with parchment paper.

Bake the biscuits in a preheated static oven at 180° for 15 minutes, then take them out of the oven and let them cool.

Royal icing preparation

Prepare the royal icing by whipping the egg white and 100 g of icing sugar in a hand blender

When the mixture is homogeneous and thick, transfer it immediately into several bowls, then add the gel or powder dyes.

Pour the icing into as many sac-à-poc as the colors you have chosen, using small nozzles (n°2) and decorate the biscuits with various colours.

If you want to fill the entire surface of the biscuit, use a toothpick to spread the icing immediately.

Advice and tips

Christmas cookies can be stored in one closed tin box for a maximum of 10 days.

Always use gel or powder dyes. It is not recommended to use liquid dyes, because they change the density of the icing and make it more liquid, preventing it from solidifying properly once on the biscuits.
